You'll find them in many Asian cuisines to add boost umami flavor and thanks to holding their shape well, they work very well in stews and soups. They are also delicious simply sautéed with brown butter and served with some toast.
King Blues' meaty texture means they make a great substitute for meat if you're looking to cut down or cut-out meat use in a meal, but they also hold their own if served with a steak!
