Shiitake mushrooms have a rich, savory flavor and are very juicy. While the whole mushroom is edible, the stems are usually removed and saved for soup or stock as they have a thicker texture and take longer to cook. Shiitakes are at their best in soups, served with eggs or stir-fried.
